Frying and serving

Method

  1. In a large bowl, whisk the eggs, sugar and salt together.

  2. Pour in the room-temperature kefir and mix.

  3. Sift in the flour and stir until you have a thick, lump-free batter.

  4. Sprinkle the baking soda over the batter and stir quickly; it will foam slightly.

  5. Let the batter rest for 10 minutes until bubbles form.

  6. Heat the oil in a wide frying pan over medium heat.

  7. Spoon tablespoons of batter into the pan, leaving gaps between them, and fry the first side for 3 minutes.

  8. Flip and cook the other side for about 2 minutes until golden.

  9. Cook the remaining batter in batches, adding a little oil to the pan when needed.

  10. Serve hot, spread with butter, with sour cream and jam on the side.

💡 Tips

  • Take the kefir out of the fridge ahead of time; cold kefir reacts less with the soda and rises less.
  • Add the soda last and do not overmix, or the oladyi will turn out flat.
  • Keep the heat at medium; on high heat they burn outside and stay raw inside.
  • If the batter is too runny, add one or two tablespoons of flour.
  • Keep cooked oladyi side by side on a plate rather than stacked, so they do not get squashed.
