About this dish
Kuurdak is a traditional dish of fried meat and offal made in Kyrgyzstan and across Central Asia. Its name comes from the Kyrgyz word "kuuruu", meaning frying or roasting. It belongs to the tradition of nomadic herders cooking freshly slaughtered sheep, mostly in animal fat.
The Kyrgyz home version usually uses lamb, liver and heart with plenty of onions and potatoes. Spicing is simple: onion, garlic, salt, black pepper and fresh herbs. It is close to Turkish kavurma, but with potatoes and a little water it turns into a tender, juicy skillet dish.

Method
Cut the lamb off the bones into 2-3 cm pieces; if using bone-in meat, keep the bones.
Cut the heart and liver into pieces of similar size; slice the onions and cut the potatoes, keeping them separate.
Put the tail fat in a wide, heavy-based pan or kazan and render it over medium heat until it releases its fat; remove the crisp bits if you like.
Add the meat and heart and fry over high heat, stirring occasionally, until browned on all sides.
Add the onions and cook, stirring, until soft and lightly golden.
Add the liver and fry for about 5 minutes until it is no longer raw outside; overcooked liver turns tough.
Add the salt, pepper and hot water; cover and simmer over low heat until the meat is about half tender.
Add the potatoes, topping up with a little hot water if needed; cover and simmer until the meat, heart and potatoes are fully tender.
Stir in the crushed garlic and cook uncovered a little longer to reduce excess liquid.
Remove from the heat and let it rest covered.
Sprinkle with chopped dill or cilantro and serve hot.
💡 Tips
- Fatty meat and tail fat give kuurdak its real flavor; lean meat makes it dry.
- Do not overcrowd the pan and use high heat so the meat browns rather than stews.
- The heart goes in with the meat, the liver later; liver toughens if cooked too long.
- With bone-in meat, extend the simmering time if needed until the meat pulls easily from the bone.
- Serve with sliced fresh onion, a tomato salad and fresh bread.

- Lamb tail fat — Use the fattiest trimmings of the lamb or add 3 tbsp sunflower oil.
- Lamb — Beef chuck works; extend the simmering time slightly.
- Lamb heart — Replace with extra liver if unavailable.
