About this dish

Kystybyy is one of the best-loved dishes of Tatar cuisine: a thinly rolled dough filled with mashed potato or millet porridge and cooked in an ungreased pan. It is brushed with butter while hot and eaten with tea, ayran or milk.

In Tatarstan it appears at everyday meals as well as on the table for guests. In this home version the dough is kneaded with hot milk, which keeps it soft and flexible after cooking. The filling is simple mashed potato with butter and milk.

Method

  1. Cut the potatoes into large pieces and boil in salted water for about 20 minutes until tender, then drain.

  2. Mash the potatoes with the warm milk, 30 g butter and salt until smooth, then let cool completely.

  3. Mix the flour and salt, add the hot milk and oil, and knead a soft dough that barely sticks to your hands.

  4. Cover the dough and rest it for 30 minutes.

  5. Divide the dough into 8 equal pieces.

  6. Roll each piece on a floured surface into a round about 18 cm across and 2-3 mm thick.

  7. Spread the mash over half of each round, leaving a 1 cm border, then fold the other half over and press the edges lightly.

  8. Heat a dry pan well over medium heat and cook each one about 1.5 minutes per side until brown spots appear; all eight take about 24 minutes in total.

  9. Brush each one with melted butter as soon as it leaves the pan and stack them.

  10. Cover with a clean towel, rest for a few minutes and serve warm.

💡 Tips

  • Use the milk hot for the dough; it makes the dough softer and easier to roll.
  • Let the mash cool fully, as a hot filling can tear the dough.
  • Roll the dough very thin but do not overfill, or the edges will open.
  • Do not grease the pan; a dry, well-heated pan gives the best color.
  • Stacking and covering with a towel keeps the kystybyy soft.

  • Milk — Use the same amount of hot water in the dough; it will be slightly less tender.
  • Sunflower oil — Use melted butter or any neutral vegetable oil.
